Ingredients:

  • 1 (10 oz.) All But Gluten Mini Brownies
  • 2 Eggs
  • 1 Cup coconut milk
  • 1 Tsp vanilla
  • 1 Tsp cinnamon
  • 1/3 Cup brown sugar
  • 1/3 Cup white sugar
  • 1/4 Cup fresh strawberries (sliced)
  • 1 Tbsp. powdered sugar (for dusting)

Directions:

  • 1. Preheat the oven to 375°.
  • 2. Grease an 8 x 8 square baking pan.
  • 3. Break the mini brownies in half and place in the dish.
  • 4. In a small bowl, whisk the eggs.
  • 5. Add the coconut milk and whisk together.
  • 6. Add the vanilla, cinnamon, white sugar and brown sugar.
  • 7. Whisk well, and then pour the mixture over the brownies.
  • 8. Top with the sliced strawberries.
  • 9. Bake for 40-45 minutes.
  • 10. Dust the powdered sugar over the bread pudding.
